Why Palay?
Palay (/ˈpaleɪ/) is the local term for both rice paddy and un-threshed rice. Rice (humay in the local dialect) gleaned from palay is the basic food of the Philippines. Rice cultivation, along with fishing, dominates rural life in the Visayas.
Our restaurant, perched on a hill in a sleepy hamlet near Malay, with uninterrupted views over paddies and the Sibuyan Sea, pays homage to these fundamental sources of life in this ancient and beautiful land.
Our philosophy
We believe that good food invites, unites and excites. Our menu, locally and sustainably sourced, pays homage to the region's staples.
Our menu draws on Filipino, European and Asian influences to create healthy, wholesome and delicious dishes made with love and passion.
We aim to make sure that every patron at Palay arrives as a guest but leaves as a friend. We hope that you enjoy your visit and come see us again.
